Tropical Coconut Cheesecake Recipe
Ingredients:
- 1 cup of crushed graham crackers (for the crust)
- 1/4 cup of melted butter (to hold the crust together)
- 2 cups of cream cheese (this makes it creamy!)
- 1 cup of sugar (to make it sweet)
- 1 cup of coconut milk (for that tropical flavor)
- 1 cup of shredded coconut (more coconut goodness!)
- 3 eggs (to help it set)
- 1 teaspoon of vanilla extract (for extra yummy taste)
Instructions:
1. Make the Crust:
- First, we need to make the crust! In a bowl, mix the crushed graham crackers and melted butter together. It should look like wet sand.
- Now, take a round cake pan and press the mixture into the bottom. This will be our yummy base.
2. Mix the Cheesecake Filling:
- In another big bowl, put the cream cheese and sugar. Use a mixer or a whisk to mix them until it’s smooth and creamy.
- Next, add the coconut milk and mix again.
- Now, crack the eggs one by one into the bowl and mix well after each one.
- Finally, add the shredded coconut and vanilla extract. Give it a good stir!
3. Combine and Bake:
- Pour the creamy mixture over the crust in the cake pan.
- Preheat your oven to 325°F (that's about 160°C).
- Bake the cheesecake for about 50-60 minutes. It should be set but still a little jiggly in the middle.
4. Cool and Serve:
- Once it’s done, let it cool down for a bit, then put it in the fridge for at least 4 hours (or overnight if you can wait!).
- When it’s nice and cold, slice it up and enjoy your tropical treat!
