Berry Burst Cheesecake Recipe
Ingredients:
- 1 cup of crushed graham crackers (like tiny cookie pieces)

- 1 tablespoon of cornstarch (this helps thicken things up)
- 1 tablespoon of lemon juice (it’s a little sour but makes it tasty)
Instructions:
1. Make the Crust:
- First, we need to make the bottom of our cheesecake! In a big bowl, mix the crushed graham crackers and melted butter together. It should look like wet sand.
- Now, take a round cake pan and press the mixture into the bottom. This is our crust!
2. Mix the Cheesecake Filling:
- In another bowl, put the cream cheese, sugar, and vanilla extract. Use a mixer or a whisk to mix it all together until it’s super smooth and creamy.
- Now, add the lemon juice and cornstarch, and mix again until everything is well combined.
3. Add the Berries:
- Gently fold in the mixed berries. This means to carefully mix them in so they don’t get squished!
4. Pour and Bake:
- Pour the creamy mixture over the crust in the cake pan.
- Ask an adult to help you put it in the oven at 325°F (about 160°C) for 45 minutes. It should be a little jiggly in the middle when it’s done.
5. Cool Down:
- After baking, let it cool down for a bit, then put it in the fridge for at least 4 hours (or overnight) to get nice and cold.
