1. Preheat your oven to 425°F (220°C).



2. Pat the chicken dry with paper towels and season generously with salt and pepper inside and out.



3. Stuff the cavity with lemon, orange, garlic, rosemary, and thyme.



4. Rub the chicken with olive oil and place it on a roasting rack in a baking pan.



5. Roast for 1.5 hours or until the internal temperature reaches 165°F (74°C). Let it rest for 10 minutes before carving.
